GRILLED JACKET POTATOES INGREDIENTS 6 potatoes
METHOD: Cut tomatoes, capsicum and onions
into small thin strips. Mix all these strips in mayonnaise and toss.
Keep aside. Pressure-cook the potatoes with their jackets. Cool.
After cooling, make a cut in the centre of the cooked potato upto half
depth keeping the base intact. Pour ½ a teaspoon of melted butter
into each of the potatoes. Grill the potatoes till the edges turn light
brown. Arrange the potatoes in a serving dish and garnish with the mayonnaise
mixture. Serve immediately.
