METHOD Sieve the cocoa powder along with the icing sugar and sift the ground almond powder on top. Next whisk the egg whites until soft peaks are formed and then add the castor sugar and whisk it until it is stiff. Now gently fold in the cocoa mixture with the help of a spoon. Pour this mixture
into a piping bag and make small circles on a greased baking tray. Leave
it aside for 15 minutes before putting it into a preheated oven. Bake at
180 degrees centigrade for 10-12 minutes. Do not close the oven door fully,
as you must allow a little steam to escape. After you remove them from
the oven; let it cool for a few minutes before you gently lift them out
of the baking tray.
