BANANA
PUDDING
INGREDIENTS
2 bananas (firm ones)
2 tsp. custard powder (vanilla/banana)
½ coconut (squeeze out milk)
Few cashews and raisins (fried in
butter)
Cardamom powder
Saffron
Sugar to taste
METHOD
Add ½ cup of boiling water
to grated coconut and squeeze out the milk. It should be thick. Then squeeze
it once again. Slice the bananas into ¼ inch rounds and put in a
heavy bottom pan. Add the coconut milk to this and let it boil for 5 minutes.
Mix the custard powder with the thicker
coconut milk and add to the cooking bananas. After it thickens take it
of the flame and add sugar. Then add the raisins, cashews, cardamom and
leave to cool. Add saffron just before serving. You may serve it hot or
cold.
PREPARATION: 25 minutes
