BRINJAL
LASAGNE
INGREDIENTS:
4 brinjals (cut into thick round
pieces)
½ cup boiled carrots (diced)
½ cup boiled cauliflower
(cut into small pieces)
2 onions (chopped)
1 tbsp celery (chopped)
1 tbsp parsley or coriander leaves
(chopped)
1 tbsp garlic paste
maida
½ cup fresh cream
1½ tbsp tomato sauce
pepper
salt
cheese (grated)
red chilli powder
oil or butter
1 tsp oregano
INGREDIENTS FOR WHITE SAUCE:
2 cups cold milk
1½ tbsp maida
pepper
salt (as required)
METHOD:
(for white sauce)
Mix the maida in cold milk and cook
till it becomes thick. Add salt and pepper. Remove from flame and chill
it.
(for the lasagne)
Cut brinjals in thick slices, dust
some salt, pepper, garlic and dry maida. Shallow fry in non--stick
pan till light brown.
Put 1 tbsp butter in a pan and sauté
onions till light brown. Add celery, coriander leaves, garlic and boiled
vegetables. Sauté for 2-3 minutes by adding spices.
Put white sauce, cheese and ketchup. This is the filling for the lasagne.
Grease the dish, place brinjal slices,
put half filling on them and cover with slices. Cover with the rest of
the filling. Put some breadcrumbs and cheese on top. Bake for 10
minutes.
Serve hot.
