CHICKEN
WITH BROWN SAUCE
Non vegetarian
INGREDIENTS FOR THE BROWN SAUCE:
2 carrots (grated)
1 large onion (chopped)
2 sticks celery (chopped)
1 tbsp oil
1½ tbsp maida
a little soya sauce
pepper
2½ cup chicken broth
salt (as required)
INGREDIENTS FOR THE CHICKEN:
1 broiler chicken (cut into 4 parts)
2 sticks of celery
½ tsp salt
4 cups water
pepper
3 tbsp oil
INGREDIENTS FOR VEGETABLES:
cauliflower
carrots
long french beans
potatoes
mushrooms
METHOD:
(for the sauce)
Put oil and fry the vegetables till
brown, add maida and make it brown. Put broth and cook on low flame
till sauce thickens. Add salt, pepper, and soya sauce and blend the vegetables
in a blender and strain the sauce.
(for the vegetables)
Boil all the vegetables. Fry them
lightly in butter. Cut all the vegetables in big pieces and chill
them.
(for the chicken)
Put chicken in a pressure cooker
along with ingredients for the chicken. Give one whistle to the pressure
cooker to make the chicken tender. Take out the chicken pieces and chill
them. Fry in a non-stick pan till light brown. Cook chicken pieces in brown
sauce and simmer on low flame for 5 minutes.
For serving, place the chicken in
a dish and place boiled vegetables, fried potatoes and salad leaves on
it.
