STEW
Vegetarian
INGREDIENTS:
1 carrot (cut into small rounds)
2 capsicum (diced)
½ cup cauliflower (cut
into small pieces)
1 large potato (cut into small pieces)
1 tsp cumin seeds
1 tsp sugar
pepper
6 cloves
3 small cardamoms
2½ cups water
2 tbsp maida
½ tsp garlic
a few spring onions
turnip
salt(as required)
METHOD:
Fry 1 tbsp maida in oil till brown.
Add vegetables, spices, salt and water. Cook for 3-4 minutes in a cooker.
After the first whistle, add 2 tbsp tomato sauce, vinegar, sugar and onions.
Simmer for few minutes and mash
the vegetables to make a stew.
SERVES: 4.
