ROASTED BELL PEPPER CROSTINI Recipe | | Salads and Raita Recipe by Tarla Dalal |
| | INGREDIENTS | 8 to 10 slices of French bread [20 mm (3/4 inch thick)]
For the topping
1 cup red, green and yellow peppers, cut into short strips
1/2 cup finely chopped onions
1 large clove garlic, grated
1/2 teaspoon sugar
1/4 cup mozzarella cheese or cooking cheese, cut into short strips
4 stuffed green olives, sliced
2 tablespoons olive oil or oil
Salt and freshly ground pepper to taste
| | METHOD | For the topping
Heat the olive oil and sauté the peppers, onions and garlic over very low heat till they caramelise lightly.
Add the sugar, salt, pepper and sauté for 2 to 3 minutes.
Remove from the flame and cool completely.
How to proceed
Top the pepper mixture, cheese strips and olives generously onto the French bread slices, arranging them decoratively.
Bake in a pre-heated oven at 200°C (400°F) for 3 to 4 minutes or until the cheese has melted.
Serve hot.
