DINNER ROLLS Recipe

  INGREDIENTS
450 grams plain flour (maida)
25 grams ghee or margarine or butter
20 grams fresh yeast or 2 teaspoons dry yeast
1 1/2 level teaspoons sugar
1 level teaspoon salt

  METHOD
Sieve the flour very well.
Mix the sugar and yeast in 1 teacup of warm water and stir until the yeast dissolves.
Add this liquid to the flour and make a soft dough by adding some more warm water.
Knead the dough for at least 6 to 7 minutes.
Mix the ghee and salt very well.
Add to the dough and mix well.
Keep the dough under a wet cloth for 20 minutes.
Knead for 1 minute.
Divide the dough into small pieces and shape into rolls.
Put on a well-greased baking tin leaving enough margin for expansion.
Leave the tin in a closed cupboard for 20 minutes.
Bake in a hot oven at 450°F for 10 minutes. Reduce the temperature to 400°F and bake for a further 15 to 20 minutes.
Remove from the tin and and brush on top with ghee.
Serve hot in folded napkins with butter.
