COLONIAL VIRGINIA ASH CAKES Recipe
Starters and Snacks Recipe by Kevin Tighe


 45 Minutes  4 - 6 Persons

  INGREDIENTS
1½ cups white corn meal
1 tsp salt
½ cup butter
1¼ cups of water

  METHOD
1. Put cornmeal & salt in a bowl. Combine butter and water in     saucepan and bring to a boil. Remove and stir in cornmeal and     cook to a thick mush.

2. Colonial way - Lay in front of hearth until the tops have dried a bit.     Draw hot ashes from the hearth over the cakes to continue
    cooking. Withdraw from hot ashes and brush/cut ashes off cakes.     (You can put aluminum over and under the cakes before putting     the hot ashes over them if using a fireplace. Can also be done in     a campfire)

3. Modern way - Preheat oven to 400F, 200C. Drop by spoonfuls     onto a baking sheet. Bake for 20 minutes. Serve with butter, jam,     honey, etc.
