AX HANDLE BISCUITS Recipe
Starters and Snacks Recipe by Kevin Tighe


 1 Hour  12 - 15 Minutes

  INGREDIENTS
6 doz biscuits
2 lbs of flour
½ tsp sugar
Scant tsp salt
6 ounces of lard
1 cup cold water
Dab of baking powder

  METHOD
1. Work all ingredients together. Place on a chopping block. Pound     away at it with the flat side of an ax, a mallet, etc for 20 to 30     minutes steadily.

2. The dough will 'blister and appear smooth and glossy'. Remember     to turn the dough so you make layers upon layers upon layers.     When the dough gets satiny, roll the dough out flat and cut with a     round biscuit cutter (2 to 2.5 inches across).

3. Pierce the tops with a fork twice. Bake at 400 F (200C) for 25     minutes until golden brown. (You may want to butter the pan     before baking or cook on parchment paper).

Note:
This recipe is from colonial American times, prior to 1776.
