CUCUMBERS IN KASURI METHI Recipe | Salads and Raita Recipe by Kevin Tighe |
| INGREDIENTS | 2 cucumbers (peeled and sliced thin)
1 onion - sliced very thin in rings and then separated
1 green pepper - sliced thin in rings (you can use a hot pepper instead for a fiery salad)
¾ cup vinegar
1½ cups water
Salt
Sugar
2 tsp kasuri methi | METHOD | 1. Add vinegar, salt, sugar, water, kasuri methi to a large bowl.
2. Stir to dissolve. Taste for seasoning.
3. Add sliced cucumbers, onions, peppers to the bowl, stir to coat all sides.
4. Cover and refrigerate overnight.
5. Serve as a salad. |
