| INGREDIENTS | 1/2 red pepper, seeds removed
1/2 green pepper, seeds removed
1 carrot, peeled
1 cup cabbage, shredded
1/2 small onion, peeled
1 cucumber, peeled
2 teaspoons juice from dill pickles
1/2 teasp vegetable oil
1/2 teasp dry dill or 1 tablespoon fresh, chopped
pinch of sugar
Salt to taste | METHOD | The secret to making this salad correctly is slicing the vegetables very thin, no wider than 1/8 inch. Blend all ingredients together and place in the fridge for about an hour - you want the vegetables to let out some of their juice to blend their flavors. Add more pickle juice or salt if desired. The salad is supposed to be light tasting with a bit of dill flavor. |
