VEGGIE-RIBBON TOSS SALAD Recipe

  INGREDIENTS
2 large carrots,2 medium cucumber finely chopped ,1 tbsp oil,2 tbsp chopped pecan,1 clove garlic minced,1/4tsp chilli pwd,1/4 ground cumin pwd,a few coriander leaves.

  METHOD
1.Using vegetable peeler,cut carrots and cucumbers into long ribbons.
2.In a large non stick pan,cook pecans over -medium high heat,stirring,until toasted.
3.Remove and keep aside.
4.Take the same pan heat oil over medium-high heat.
5.Add garlic and seasoning cook for 2 min stirring occasionally.
6.Add carrots and /2cup water reduce heat to medium cook till tender r 8 min.
7.Add cucumbers cover cooktill tender 4 min.
8.Remove from heat stir in pecans and coriander.
