HAKKA NOODLES Recipe

  INGREDIENTS
o Fried Noodles:100g noodles(boiled),
o 2 tbsp oil,
o 3 dry whole red chillies(broken into bits),
o 1/2 tsp chilli powder,
o 2 tsp soya sauce (I tried it with SIL oh Ya! Soya, and it was damn yummy),
o 1/2 tsp salt.
o Vegetables:1 capsicum shredded,1 carrot shredded,1/2 cup shredded cabbage,3-4 flakes garlic(crushed and chopped, optional),2-3 spring onions or 1 ordinary onion,
o 2 tbsp shredded bamboo shoots-optional,
o 3-4 tbsp bean sprouts-optional,
o 2-3 mushrooms(cut into 4 pieces),
o 1/2 tsp pepper,
o 1/2 tsp sugar,
o 1/2 tsp ajinomoto (optional),
o 2 tsp vinegar,
o 1 cup water,
o 1 1/2 tbsp corn flour dissolved in 1/2 cup water.

  METHOD
o In a pan, heat 2 tbsp oil. Remove from fire, add broken red chillies and chilli powder. Return to fire and mix in the boiled noodles, salt and soya sauce. Fry for 1 minute, till evenly brown in colour. Keep the fried noodles aside. To prepare the vegetables, shred all the vegetables. Heat 3 tbsp oil, reduce heat and add garlic. Add vegetables in sequence of their tenderness (onions, mushrooms, sprouts, bamboo shoots, capsicum, carrot and cabbage).Add ajinomoto, salt and pepper. Add soya sauce and vinegar. Cook for 1/2 minute. Add water. Boil. Add corn flour mixture, stirring continuously. Cook for 1 minute till thick. Remove from fire. To serve, spread the fried noodles on a platter. Pour the prepared hot vegetables over the noodles. Serve.
