| | INGREDIENTS | 25 green chillies (capsicum style, broad and short)
225 grams paneer
1 onion
Oil for deep frying
4 tablespoons grated cheese
Salt to taste
For the batter
2 teacups plain flour (maida)
2 teacups water
2 level teaspoons baking powder
Salt to taste
For Hot Sauce
1 kg. red tomatoes
6 red dry chillies
1 chopped onion
1/4 teaspoon ajwain
3 teaspoons sugar
2 tablespoons oil
Salt to taste
| | METHOD | For Hot Sauce
Soak the chillies in 1/2 teacup of water for 15 minutes.
Heat the oil in a vessel and fry the onions for a little time. Add the tomatoes and the chillies (with the water) and cook till the tomatoes are soft.
Blend the mixture in a liquidiser and strain the sauce.
Add the ajwain, sugar and salt and boil for at least 10 minutes.
How to proceed
Chop the paneer and onion finely, mix together and add salt.
Cut off the tops of the chillies and scoop out the centres. Put in boiling salted water for 1 minute and then drain the chillies.
Stuff the chillies with the paneer mixture.
Mix all the ingredients of the batter. Dip the chillies into the batter and deep fry in hot oil.
Serve hot as it is with hot sauce or pour the boiling hot sauce over the fried chillies and serve with grated cheese.
