| INGREDIENTS | Very healthy, very tasty
Carrots are a good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants. Also helpful for weight-loss and in lowering cholesterol
Ingredients:
Carrots
Ginger
Opinions
Basil leaves (or mint leaves)
Salt
Black pepper
Sunflower seeds (or pumpkin seeds)
Olive oil | METHOD | Peel skin of 4 carrots and make pieces. Heat olive oil in a cooker. Saute ginger (about 2 inch piece). Add chopped onion or slices and cook until soft (don't let it brown). Add carrot pieces and mix. Then add water 4 cups of water and pressure cook for 3 whistles.
Once cooked, strain it in a bowl (save the drained water). Then in a blender, blend the boiled carrot pieces into smooth puree. Transfer this puree to a deep pan. Add the drained water back, and add additional 2-3 cups of water (based on the consistency you would like). Add salt and black pepper to taste. Your carrot ginger soup is ready.
Garnish with basil leaves and sunflower seeds. Enjoy!
