Ingredients:
Tomatoes Onions Capsicum Garlic Green chillies Tobasco Ajwain (caron seeds) Oregano powder Chilli flakes Sugar Salt Oil | METHOD | The quantities below are to make excess pizza sauce that can be stored in the freezer that can be used anytime later.
Chop 15 tomatoes, 3 onions and 1 capsicum into small pieces (chopper is the best). Make a paste of 2 green chillies and 10 garlic pods and keep ready.
Heat olive oil in a pan, saute ajwain, crushed garlic and geeen chillies. Add onions and cook them until pink (not brown). Then add chopped capsicum and cook until soft, followed by chopped tomatoes. Cover the pan and cook for 10 min, stir and add tobasco, 1-2 tsp sugar and salt. Cover and cook for a further 15 min. Stir occasionally to ensure it is not sticking to the floor. Add oregano powder, chilli flakes and basil leaves and cook for 2-3 min for the flavours to soak in. Allow to cool.
Once cooled, blend the mixture in a blender into a smooth paste (or the way you like). Add salt and chilli sauce to taste.
Your pizza - pasta sauce is ready. You can make either use this pizza sauce to make pizzas or pasta, or store it in the freezer for later use.
