GOAN SOL KADHI - A DELICIOUSLY SPICED KOKUM COCONUT DRINK Recipe

  INGREDIENTS
A perfect summer cooler!

(It is a perfect digestive drink too)

Ingredients:

Fresh Coconut
Fresh red Kokum (Malabar tamarind)
Garlic
Jeera (cumin)
Green chillies
Sugar
Salt
Corriander or mint leaves (for garnishing)

  METHOD
Preparation of Coconut milk:
(You can also try readymade coconut milk)

Break fresh coconut, and cut the coconut flesh into small pieces. (If you don't have fresh coconut, you can also use desiccated coconut). Crush coconut with a cup of water in a blender. Squeeze this mixture through a thin cloth for the coconut milk. Again take the crushed cocunut, add a cup of water, run it through the blender and squeeze out more coconut milk through a thin cloth. Repeat this a couple of time. (Note that coconut milk gets diluted with each round, so add water in limited amounts). Once you are happy with the consistency, add tbsp of garlic, one green chilly, jeera powder, 1 tsp sugar and 1 tsp salt and blend for the final time. Your coconut milk is ready!

Preparation of kokum extract:

Soak 10-12 pieces of fresh kokum in hot water for about an hour. (Some people like to add a pinch of salt and hing). Then squeeze kokum flowers to extract colour and flavour (tangy sour taste). Strain and save this reddish water in a bowl and throw away the crushed kokum.

Now add the kokum extract to the coconut milk. Your sol kadhi is ready! You can enjoy it as a drink or have it with rice.

(Note: Please use only fresh kokum. I tried it with dry kokum first, and it has no colour and a very mild taste!)

Garnish with corriander or mint leaves. I had it for the first time in Goa ...this definitely is one of my favourite drinks!
