VIETNAMESE FRESH ROLLS WITH DIPPING SAUCE Recipe

  INGREDIENTS

Ingredients

8 Rice Paper wrappers (can use big lettuce or collard green leaves also)
1 cucumber, julienned
1 Red Bell Pepper, julienned
1 Mango, julienned
8 tofu strips, marinated and grilled
½
cup crispy onions
8-10 mint leaves
8-10 cilantro leaves
½
cup of cooked vermicelli noodles

Warm water (slightly warmer than room temperature) in a shallow bowl (1-2 inch depth) to dip the rice paper wrappers

Tofu Marinade:
Low sodium soy sauce/ tamari
Red pepper flakes
Garlic powder
Lemon juice or rice vinegar

Crispy onions:
3-4 small onions or shallots, sliced
1-2 tbps rice flour
3 tbsp oil
Coat the onions with rice flour and cook in oil till they are crisp

Peanut Sauce:
1/3 cup peanut butter
2 tbsp low sodium soy sauce / tamari sauce
2 tbsp lemon juice or rice vinegar
Maple syrup (optional, if you prefer mild sweet taste)
Salt to taste (if peanut butter is unsalted)

  METHOD
Prepare all the julienned vegetables and fillings. Grill the marinated tofu strips. When you are ready to assemble the rolls, take some lukewarm water in a shallow wide dish. Dip a rice paper in the water for about 10 seconds and put it on your prep surface (make sure it's not soaking wet). The water for dipping the rice paper wrapper should not be very hot otherwise it will start cooking. It should be slightly warmer than room temperature, just enough to soften the rice paper and make it pliable.

Add the fillings to the middle of the wrap and fold it like you would fold a burrito.

The rolls are best made as close to when you are ready to serve/ eat. All other prep and dipping sauce can be done ahead of time. They also tend to stick together once made so space them out. You could individually wrap them in cling wrap and store for longer. Also, be sure to cover it with a damp muslin cloth or kitchen towel as you are preparing the rolls. They tend to dry out, so I recommend keeping them covered like so until you're ready to serve them.

The rolls in themselves have a very simple flavor profile. The dipping sauce definitely helps take the flavor up a notch.

If you don't have access to rice paper, you can easily make these rolls in lettuce leaves. They will be just as delicious with the peanut sauce. You could also serve with some Sriracha or chili garlic sauce.
