| INGREDIENTS | Dahi (yogurt) Besan (chana flour) Eno fruit salt Haldi Red chilli powder Ginger Green chilies Kadi patta (curry leaves) Rye Methi dana Cloves Oil Salt | METHOD | Preparing the pakoras:
Take 1 cup of besan in a pan, add haldi powder, red chilli powder, salt and a pinch on eno fruit salt (for the pakoras to fluff up). Then add water and mix to make it into a smooth paste such that is not watery. Leave aside for 10 min for the Eno fruit salt to work.
Then heat oil in a pan and fry the pokoras, adjusting the flame as required. Your pakoras are ready.
Preparing the Kadhi:
In a large pan, take 1 cup of dahi, add 3 cups of water, 1 heapful tbsp of besan and mix it well with a beater.
Then in a large pan, heat some oil and saute ginger (very important for flavour), kadi pata, green chillies, rye, methi dana and cloves. Once ready, add the dahi, besan, water mixture. But to remove besan lumps, pour this mixture through a sieve (not too fine). Add salt as required, and cook it for 10 min, allowing it to come to a boil.
Once boiling, add pakoras and your pakora kadhi is ready! Garnish with corriander.
