Ingredients for Pani puri water:
Pudina (Mint leaves) Corriander Green chillies Ginger Kaala namak Chaat masala Pani puri masala Bhuna jeera (roasted cumin seeds) Boondi Lemon Salt
| METHOD | Ingredients for ragda: Soaked overnight and boiled white vatana
Ingredients for Meethi Chutney: Khajur (fresh dates) and Imli (Malabar tamarind)
Pani puri water preparation:
First step in making the water is the chutney preparation, with which the water will be made. (This corriander-mint chutney can also be used for sandwiches, or for anything at all).
Take mint and corriander leaves and put them in a blender. Add some water, green chillies, ginger, salt and lemon (lemon prevents pudina from darkening) and blend to a smooth consistency. Your mint chutney for pani puri water is ready.
Now in a large bowl add 5 tbsp of chutney and 5 cups of water. Then add kaala namak, chaat masala, pani puri masala (store-bought), roasted jeera powder, lemon and salt to taste. Taste the water and check if you need to add any more chutney, spices, salt or lemon.
Before serving, add bondi to the pani puri water. It adds crunchiness, flavour and colour to the water.
Meethi (khajur-imli) chutney: Meethi chutney is am important ingredient in pani puri and all other chaat dishes. The recipe for this chutney was provides a few days back on the reluctant_chef page. Ideally you should always have it ready in a freezer :)
Ragda: In this pani puri preparation, ragda is being used as a filling. Ragda recipe was provided yesterday as ragda chaat on the reluctant_chef page.
Final preparation: Serve pani puri along with ragda, pani puri water, and meethi chutney.

(Tip: Boiled potatoes and mung daal spiced with red chilli powder and salt is another substitute for ragda. But ragda is definitely healthier. Also, if the puris are not crispy, you can microwave them for 10 seconds before serving)
