STUFFED BAKED POTATOES -DELICIOUS! Recipe | Snacks Recipe by reluctant_chef |
| INGREDIENTS | Ingredients for 4 servings:
4 medium sized potatoes, boiled & peeled. 2 tsp butter 6 garlic cloves 2 medium onions I cup sweet corn kernels, boiled I carrot, finely diced. 1 capsicum, finely diced 1 cup milk 1 tbsp cornflour 2 tbsp tomato puri 2 tbsp tomato ketchup 2 tsp cream Cheese, grated Salt Red chili powder Oregano Chilli flakes. | METHOD | 1. Cut the potatoes into half, length wise. Scoop out the centre & keep aside.
2. In a wok, heat the butter, add the garlic & onions & saute till the onions become translucent.
3. Add the corn , carrots & capsicum & saute for a minute.
4. Add the cornflour in the milk & pour into the above wok. Stir till the milk thickens.
5. Add salt, oregano & chilli flakes.
6. Put a little of the mixture in the scooped potatoes & plate in your baking dish.
7. Preheat your oven at 180° for 15 min.
8. In a small wok mix the tomato puri, tomato ketchup & cream. Heat & mix well till the cream dissolves completely. Add salt & chilli powder.
9. Pour this sauce over the potatoes.
10. Sprinkle grated cheese & bake for around 20 min or till the cheese turns brown.
11. Serve piping hot!!
