SUMMER PEACH SALAD

| | INGREDIENTS | Soft fresh Goat cheese
2 Peaches sliced
1 onion sliced
8-10 cherry tomatoes halved
Rocket salad leaves
Olive oil
Mustard
1/2 Lemon rind
1 tablespoon Lemon juice
Salt
Pepper
1 tablespoon Pine nuts | | METHOD | Whip the goat cheese with lemon rind and a pinch of salt
Make the dressing - Mix the olive oil with mustard and lemon juice, salt and pepper
Slice the onions into long and fine slices and soak them in the dressing for ten minutes
Spread the goat cheese onto a plate, add the sliced peaches and rocket salad, then add the marinated onions and arrange tomatoes on top and pour the rest of the dressing on top.
Finally add pine nuts for decoration.
