| INGREDIENTS | Very healthy and delicious! Eggplant is a great source of Vitamins and Minerals
Ingredients:
Big Baigan (Brinjal / Eggplant / Aubergine) Tomatoes Onions Garlic Chilli powder Dhaniya jeera powder Salt Oil Corriander leaves | METHOD | Roast brinjal directly on medium to high flame for almost 40 minutes. This process of smoking on a flake infuses a nice smoky flavour. Then gently peel off the burnt skin and wash it with water to remove all traces of the skin. On a chopping board make small pieces of the brinjal pulp. (The quantity would have reduced substantially)
Then heat oil in a pan and saute chopped garlic and onions. Once brown, add chopped tomatoes. Then chilli powder, dhaniya jeera powder and salt. (The quantity of tomatoes and onions should be sizeable). Add brinjal pulp pieces, and with a masher, while on the gas, mash it till it all besides one.
Your baingan bharta is ready! Garnish with corriander leaves. This dish is best enjoyed with paratha.
