KAJU KATLI Recipe | Indian Sweets Recipe by reluctant_chef |
| INGREDIENTS | 3 cups kaju (cashew) powder( make sure that the powder is dry ) 1 cup sugar 5 tablespoons water Pinch of elaichi (cardamom) powder Ghee for greasing | METHOD | First thing the cashew nuts in a grinder. Ensure the grinder kar is absolutely dry. Grinding the cashew powder is the main thing, so ensure that you take a smaller quantity of cashews at a time. Also do not use the grinder on a high speed and also not for too long (just 5-8 sec at a time)
Then Ina nonstick pan pour the sugar and water together. Put the pan on medium flame and wait till the sugar melts completely. (Please DO NOT MAKE IT INTO ANY KIND OF CHASHNI) Then add the kaju (cashew)powder and keep on stirring it for 7-8 minutes. Then add the elaichi powder and stir the mixture till it becomes like a ball (dough). (Note that if you put the elaichi powder too early, the dough will become blackish). Remove the pan from the gas .
Then take butter paper or wax paper and place it on flat surface. Now grease a thick rolling pin(belan) with ghee and then flatten the kaju ball with the rolling pin (belan). Cut into small diamond shape pieces and enjoy your kaju katli.
Kaju katli is one of the few Indian sweets that has a very long shelf life.

(Tip: The next step would be to put varak (silver leaf) to decorate it, but was not available because of the lock down. However Varak can also be bought either from a sweet shop or from Amazon.in)
