FRESH FRUIT BURRATA WITH PESTO Recipe | Salads Recipe by reluctant_chef |
| INGREDIENTS | Easy to make, looks and tastes fabulous!
Ingredients:
Burrata cheese (Italian cow milk cheese made from mozzarella and cream)
Pineapple
Black Grapes
Apple
Tomato
Spring onions
Basil leaves
Parmesan cheese
Garlic
Extra virgin Olive oil
Pine nuts (walnuts will also do)
Salt | METHOD | Preparation of Pesto sauce:
In a grinder, crush, basil leaves, garlic cloves, parmesan cheese, pine nuts, extra virgin olive oil, and salt. Your pesto sauce is ready.
Preparation of the salad:
In a large bowl, add pieces of apple, pineapple, grapes, tomatoes, corriander leaves and spring onions. Add extra virgin olive oil, salt and pine nuts (I forgot to add) and mix well.
Finally add the Burrata in the center and garnish with pesto sauce, extra virgin olive oil, basil leaves and chives (greens of the spring onions). Pesto gives the Burrata and salad a delicious flavouring.
Enjoy!
(Tip: Although Burrata is generally enjoyed berries and stone seed fruits like peaches, or vegetables like zucchini and eggplant, you can use whatever fruits and vegetables you have. I used primarily fresh pulpy fruits since they give the salad a sweet juicy flavour which I love)
