CREAM OF BROCCOLI SOUP Recipe | Pickles, Chutneys and Dips Recipe by reluctant_chef |
| INGREDIENTS | Very quick, very healthy
Ingredients:
1 bunch Broccoli
1 chopped Onion
3-4 Garlic peels
1/2 cup Milk
1 tbsp Butter
1/2 cup Fresh cream
Salt and Black pepper | METHOD | Boil Broccoli for 4-5min. Add salt and water and blend in a blender.
In a pan, make white sauce by putting 1 tbsp butter and 1 tbsp maida flour. Keep stirring to ensure it does not burn. Then, depending on the quality of broccoli, add 1/2 - 1 cup milk. And cook for some time for it to thicken. (To make it easier, you can also skip white sauce and directly use milk in the soup).
In another pan, heat olive to saute finely chopped onions and garlic. Pour the blended broccoli, add white sauce, salt and black pepper to taste. mix well. Cook until you get the desired consistency you like. Soup is ready.
Garnish with fresh cream, chopped carrots and small broccoli florets.
Goes perfectly with garlic toast. Enjoy!
(For a really quick recipe, simply boil broccoli in a pan for a few minutes, add milk and blend. Then add salt and pepper to taste)
