| INGREDIENTS | My kids love this vegetable!
Ingredients:
Methi leaves
Potatoes
Onions
Tomatoes
Salt
Haldi
Chilli powder
Dhaniya jeera powder
Garam masala | METHOD | Pluck methi leaves and wash well (2-3 times). Then chop very finely and sprinkle 1 tsp of salt (this will help it leave excess water) and leave it for some time.
Take potatoes (with skin) and cut them into small pieces. Heat oil in a pan and fry the potato pieces till well-cooked. (For a healthier subzi, you can also use boiled potatoes, but the taste will certainly not be as good).
Now take the methi from the bowl and squeeze out all the water. Heat some oil in a pan and cook the methi on slow fire. Keep stirring. Mix and cover for a few minutes (keep stirring occasionally so I does not get burnt).
Sautee onions and garlic. After they turn brown, add tomatoes and potatoes. Then add salt, haldi, dhaniya powder, jeera powder, red chilli powder and garam masala. Your subzi is ready!
