DAHI VADA (URAD DAL BALLS IN YOGHURT) Recipe | Snacks Recipe by reluctant_chef |
| INGREDIENTS | A perfect savoury accompaniment to any meal!
Ingredients:
Urad daal (split and skinned black gram) Yoghurt Salt Oil Khajur chutney
| METHOD | Method:
Wash well and soak 2 cups urad dal in about 3 cups of water overnight. (1 cup urad daal makes about 10 small vadas)
Then the next day, drain out the water. Then grind it to a fine paste in the grinder. Add very little water if required. Leave the paste covered for about 20 min. (Many people then vigorously whisk it with a small amount of hing water to make the it airy and light. This is optional)
After 20 minutes, add salt according to your taste, and mix well. Heat oil in a frying pan, and once heated, simply drop balls of batter in the pan. Try to make them round and of the same size. Once they are brown, take them out of the frying pan in a large bowl of room temperature water for about 10 minutes. This will remove a lot of the oil form the vadas and make them soft. (Vadas will first be floating in the water, and after some time settle down).
Then lightly squeeze each Vada between your palms and arrange them in a flat serving dish. Pour beaten yogurt over the vadas. Garnish it with salt, chilli powder, jeera powder, khajur chutney (optional) and corriander leaves.
Enjoy dahi vadas chilled!
