CREAM OF MUSHROOM SOUP Recipe

  INGREDIENTS
Easy to make and a real delight for mushroom lovers!

INGREDIENTS:

Mushrooms
Plain flour or maida
Fresh cream or malai (or milk)
Garlic (optional)
Onion
Butter or Olive oil (or any oil)
Black pepper powder
Salt
Cheese (for garnishing)

  METHOD

Heat butter in a pan (any oil will also do) and saute 5-6 pieces of crushes garlic and 1/2 cup chopped onions until translucent brown. (Garlic and onions add a unique flavour to the soup).

Then add chopped mushrooms and let it cook for about 5 minutes for all the water to release. (Covering pan is optional). The add one tbsp maida or wheat flour and stir for a minute. Add 3 cups of water and let it boil for about 5 minutes. Add salt and black pepper powder. The flour will help the soup thicken. Let it cool for at least 10 min. Your basic soup is ready.

Once cooled, put the entire mixture in a blender. (You can take 1/2 cup out and blend the rest. This can be added in the end as topping). When soup is blended, again transfer to a pan and add 1/4 cup of full cream or malai. Then heat it for about 2 minutes (don't let it boil as cream will curdle).

Your cream of mushroom soup is ready. Transfer to a serving bowl and add the cooked mushroom pieces as topping. Also add a scoop of fresh cream and swirl it in. You can also garnish with grated cheese.

(Tip: If you like your soup to be chunky and dairy-free, you can end at the basic soup step.

If you want it dairy-free and don't add fresh cream, it will be mushroom soup, and not cream of mushroom, which is also very tasty! In this case you can add an additional tbsp of maida to create the thick broth.

If you don’t have fresh cream or malai, but still want to have cream of mushroom, then after adding plain flour to the mushrooms, add a pre-boiled mixture of 1 cup of milk and 2 cups water. Stir continuously to prevent lumps and let the mushroom mixture come to a boil. Your cream of mushroom soup is ready. You can put it in a blender if you like your soup smooth.)
