SPROUTED MUNG DHOKLA (GREEN GRAM DHOKLA) Recipe

  INGREDIENTS

An ideal tea time snack and healthy weight loss food as it is a low-fat food.

Also lowers cholesterol levels and reduces the risk of heart disease. A healthy protein for diabetes that helps in regulating blood sugar levels.

INGREDIENTS:

Soaked mung daal (sprouted mung daal)
Eno fruit salt
Green chillies
Ginger
Lemon
Salt
Oil
Mustard seeds (rye)
Curry leaves (kadi patta)
Corriander leaves
Fresh coconut

  METHOD
Soak mung daal overnight (either full mung or split mung).

The next day, drain water and crush 2 cups mung daal in a blender with 2 green chilli pieces, ginger pieces, 2 lemons juice, salt, 1 tsp oil and some water. Grind into a paste. Add water to reach the consistency of a batter. Then add 3 tsp eno fruit salt and mix.

Then prepare the steamer by adding water and placing a stand. Then grease the dhokla thali and pour the batter. Steam for 20 minutes. Check it is well cooked by poking a fork. If fork comes out clean, it means the dhokla is cooked. Else steam for another 5 minutes. Let it cool for about 10 min and then cut into square or diamond pieces.

The heat oil in a tadka pan for tempering. The saute rye, green chillies and kadi patta. Once tempered, pour this on the Dhoklas.

Garnish with corriander leaves and grated or crushed fresh coconut. Serve with green chutney, sweet chutney or ketchup.

Enjoy!

(Tip: you can also pour a hot mixture of dissolved salt, sugar and lemon over the Dhoklas for a refreshingly, slightly sweet and tangy taste.

The green colour of this dhokla adds a nice variety to the dinner table.

Please note that the Dhoklas should be much fluffier than what I made because I mistakenly added less Eno. Please follow the recipe measurements for fluffy Dhoklas.)
