MOM'S LEGENDARY APPLE CRUMBLE Recipe

  INGREDIENTS
FILLING INGREDIENTS (Adjust to Taste)
-1 lb apples or 3 regular apples
-1 cup (to taste) brown sugar cyrstals
-1/3 - 1/2 cup all purpose refined flour
-A pinch of ground cinnamon
-A pinch of fresh nutmeg
-2-3 pods of cardomom, finely ground
-Juice of 1 lemon
-A splash of good spiced rum (old monk is the best choice) or a syrupy bourbon/scotch
-A pinch of salt
-1 tbsp butter
-(Optional) A pinch of star anise

CRUST INGREDIENTS (Adjust to Texture)
-2 and 1/4 cups all purpose refined flour
-1 cup olive or another neutral oil
-A few splashes of milk - about 1/4 cup
-A good pinch if salt
-1-2 tbsps of granulated sugar

  METHOD
FILLING
Slice the apples into matchsticks, about an inch long. Add the chopped apples to a bowl and gently mix in the lemon juice, followed by the brown sugar and flour making sure to incorporate well. Add the cinnamon, cloves, nutmeg, cardamom, star anise, and a pinch of salt and mix until incorporated. Heat up a tablespoon of butter in a pan until melted and bubbly, then transfer apples to pan on medium high heat. Add the rum and cook until apples have softened. Set aside.

CRUMBLE
1. Add the filling to the pie dish, gently and consistently spreading across until full.
2. Crumble the remaining dough into little crumbs/balls with your hands, then sprinkle these over the top until evenly coated. Make a nice shape or pattern out of any remaining dough and add it as decoration
3. Bake in a 180 C (355 F) oven for 35 minutes or until the crust is golden brown. You may optionally baste it in honey butter at periodic intervals to brown the crust more.
4. Let rest for 20-30 mins before serving with ice cream
