| INGREDIENTS | For the Dough:
2 cups Makkai aata (makes 12 taco shells)
1 cup maida
1 tsp oil
1 tsp ajwain
Salt
For the salad:
Iceberg lettuce (or cabbage)
Spring onions
Capsicum
Cheese
Salt
For the Rajma sauce:
Rajma (Red Kidney Beans) -soak overnight
Onions
Garlic paste
Tomato puree
Ketchup
Oil
Chilli powder
Dhaniya jeera powder
Salt
For the salsa sauce:
Tomatoes
Spring onions
Green chillies
Red chilli flakes
Corriander leaves
Oregano
Salt
Sugar | METHOD | Dough Preparation:
Knead dough, a little stiff, by adding little water at a time. Cover with wet cloth and leave aside for 10 min. (increases the consistency and stickiness).
For taco shells, roll dough in 4 inch diameter. Poke with fork to prevent puffing. Dry them on newspaper for 30-45min, helps to make taco shells more crispy.
You have a choice of either baking or frying these taco shells. If frying, heat oil in a pan and fry (I have fried mine). For baking, per-heat the oven to 180 degrees and bake for 7-10 min until brown. Your taco shells are ready. (Note that I prefer to keep the taco shells flat, because bent taco shells make a mess while eating)
Salad Preparation:
In a bowl, mix shredded iceberg lettuce, sliced capsicum (optional), finely chopped spring onions, cheese and salt. Your salad to add to the taco is ready.
Rajma Sauce Preparation:
Soak rajma (kidney beans) overnight. Then the next day, boil them and set aside. Blanch tomatoes, peel and make tomato puree. Heat oil in a pan and sautee finely chopped onions and crushed garlic, then add tomato puree, tomato ketchup, chilli powder, cumin seed powder and salt. Then add mashed kidney beans and cook for some time. Your rajma sauce is ready.
Salsa sauce Preparation:
In a bowl, mix finely chopped spring onions, tomatoes, corriander leaves, green chillies, red chilli flakes, oregano, salt and a bit of sugar. Your salsa sauce is ready (no cooking required!)
Assembling the taco:
On each taco shell, spread layer of beans, cover with salad, top with salsa sauce, chilli sauce and shredded cheese.
