ASPARAGUS IN ORANGE BUTTER SAUCE Recipe | Salads Recipe by reluctant_chef |

INGREDIENTS:
(For 2 people)
1 bunch of fresh green asparagus
1 stick of cold butter (250 grams)
1 shallot (type of onion)
1 citron/lemon/orange (Organic!!!)
Half Cup of white wine (Chardonnay), (optional)
Half cup if white wine vinegar (optional)
juice if 1 fresh lemon or orange
chives (optional) | METHOD | 1. Peel the asparagus with a peeler and cut of the stem
2. Bind the bunch together with a piece of yarn and boil it with a pinch of salt for 15 minutes
3. Peel and cut the shallot into small cubes
4. Wash the citron/leon/orange in hot water
5. Grate the skin if citron/lemon/orange and collect the zest. Take out the juice. Strain it and keep aside.
6. In a saucepan add a small piece of butter or olive oil and sautee the shallot.
7. For the reduction: Add the zest, wine and lemon/orange juice or the white wine vinegar. You cann add a little water. Let it simmer until the quantity of the liquid evaporates down to 75%.
8. Now take the sauce pan from the source of heat and add cubes of cold butter piece by piece and make sure to whisk it into the mixture with a balloon whisk.
9. Whisking is the key! Keep whisking vigorously while keeping the mixture on low temperature. The butter should melt but not seperate, you want to create an emulsion between all the ingredients.
10. Meanwhile when the asparagus is cooked take the bunch out, let the excess water drip of, cut the yarn and place it onto the serving plated
11. Add the flavoured beurre blanc onto the asparagus
12. Season with salt and pepper and garnish with chives or other availble herbs (optional)
