OKRA SALAD (LADY'S FINGER SALAD) Recipe

  INGREDIENTS
Japanese-style salad with sesame dressing

INGEEDIENTS:

200 grams of Okra (for 2 people)
1-2 table spoons of unroasted Sesame seeds
1 Nori leaf
100 ml Japanese rice vinegar
100 ml Mirin, Japanese sweet rice wine vinegar
(1-2 tea spoons soy sauce, optional)
100 ml water
sea salt (coarse)
pinch of cane sugar (any sugar is fine)

  METHOD
1. Rub the okra gently with the sea salt to smoothen its skin by using your hands
2. Boil the okra for 4 minutes, take them out and let the water drip off and then immerse the okra immediately into ice cold water. This step is important so the green colour retains.
3. Cut off the stem and tip and then slice the pods into ca. 5 mm thuck pieces.
4. Put them into a bowl and store them into the fridge.
5. Meanwhile roast the sesame seeds in a pan until they turn golden brown and begin to pop
6. Grind the freshly roasted sesame seeds in a pestle and mortar with the pinch of sugar to a coarse powder. Important: the sugar will gently caramalize with the warm sesame and will actvas a carrier to enhance the flavour. The oil from the seeds will create a pasty texture.
7. Now heat the rice wine vinegar and sweet rice wine vinegar (Mirin) with the water, it does not need to boil. Optionally add the soy sauce.
8. Now add the liquid to the sesame seeds, stir well and keep aside to let it cool.
9. Cut the nori leaf into small pieces with a pait of scissors
10. Add the dressing the okra salad, garnish with the nori leaf flakes and a sprinkle if sesame seeds.
11. Serve fresh and cool.
