| INGREDIENTS | Raw mangoes
Jaggery (gur)
Kalonji
Jeera
Methi seeds
Sauf
Red chilli powder
Haldi (turmeric)
Garam masala
Rock salt
Salt
Oil | METHOD | Peel and 6 slice raw mangoes into wedges. Heat oil in a pan saute jeera, kalonji seeds, sauf and methi dana. Add some haldi. Then add the mango slices and mix it well. Cover the pan for about 8-10 min or until the mango pieces are soft. Then add 1 cup of water. Add red chilli powder. And add 1 cup of grated jaggery (gur). Mix it well so that the gur melts with the heat. You can also add garam masala.
Now uncover the pan and on a medium flame, let it cook until the excess water is evaporated and the required consistency is reached. Check for taste.
You launji is ready. Enjoy!!
(Tip: Instead of making slices, you can also cut the mango into pieces. If you like it sweeter, you can always add more gur)
