MAHARASHTRIAN-STYLE PURAN POLI (STUFFED SWEET ROTI) Recipe

  INGREDIENTS
Loved by all those who enjoy sweet in the main meal. A real feast!

INGREDIENTS:

Chana daal
Wheat flour
Gur
Oil
Salt
Elaichi (cardamom)
Ghee (at the time of serving)

  METHOD
Boil 2 cups chana daal. Don't worry about the quantity of water, because the excess water can be used to make Aamti (a Maharashtrian speciality daal)

While it is boiling, knead the dough using wheat flour, pinch of salt, 1-2 tablespoons of oil (depending on the quantity). The consistency of the dough should be softer that the dough for rotis. Cover with a wet cloth.

Once the chana daal is boiled, pour out all the excess water completely in a bowl (if you wish, this water can be to make another dish, Aamti, later).

Now put the chana daal in a pan, add a sizeable quantity of gur (3/4 - 1 cup), and crushed elaichi (cardamom). Start cooking it on a slow flame for about 15-20. Keep stirring it so that it does not stick at the bottom. Remember gur releases water when it gets heated. So the idea of cooking is get rid of the water and get it to consistency such can be used as a filling in the roti.

Now that the stuffing is cooked, pass it through a strainer to get the stuffing to be really smooth and even. Your puran (filling) is ready.

Make equal balls of the dough. Take each ball and roll it into a small, thick circle. Take this circle in your hand and stuff some puran in it. Wet the edges of the dough and join it together. The ball with the stuffing is now ready.

Cover the rolling board with a piece of newspaper and then sprinkle some dry flour. Then place a napkin and once again sprinkle some dry flour. Now take each stuffed ball and roll it out into a roti. You can use the flour for dusting to make it easier.

Cook it on the gas, and like any paratha, coat it with some oil on each side. Your puran poli is easy.

Serve hot puran polis with ghee. Enjoy!!

(Tip: Maharashtrian puran poli is made of chana daal and gur, and Roos are thinner; Gujarati puran poli is made of tur daal and sugar, and the rotis are thicker. So choice is yours.

Puran poli is best enjoyed either with Kadhi or with Aamti)
