ALPHONSO MANGO JUICE (HAPHUS AAM RAS) Recipe | Drinks and Juices Recipe by reluctant_chef |
| INGREDIENTS | Haaphus as part of your meal in the mango season is an absolute must, especially in the western India!
Although Aam ras is best when made from Paayri mangoes, many love the Alphonso ras as well.
Note: the technique for preparing Paayri ras and Haaphus (Alphonso) ras is different.
INGREDIENTS:
Alphonso Mangoes | METHOD | Soak the Alphonso mangoes in water for a couple of hours. This makes the mangoes cooler for the body and softens the mangoes for squeezing.
Once soaked, peel the mangoes. Don't do it bit by bit, but start with the knife and then use the knife to pull out the rat of the skin. Once peeled, cut them into small pieces. You can wash the gutlis with milk to ensure that you have extracted ever drop of mango juice. Milk is anyway required to dilute it. since Haaphus pulp can be quite thick.
(Do not throw the gutlis. Gutlis can be used to make delicious Mango Kadhi to make Aam kadhi (fajeto). Fajeto recipe in next post.)
Then in a blender, make pieces of mango into a smooth liquid. Do save a few pieces for garnishing.
Your Haaphus (Alfonso) ras is ready. Transfer to a bowl and chill it.

(Tip: Remember Haaphus juice is a bit sweet and thick, so you may any to add 1/2 cup of milk, depending on the sweetness and consistency that you like. Paayri juice on the other hand is thinner and has a tinge of sour taste.) |
