Ingredients for Tortilla:
1/2 cup each plain flour and maize flour
1TBSP sundried tomato paste
1 TBSP oil
Salt, oregano
Warm water
Ingredients for Red Chilli paste (for filling):
1TBSP ginger garlic paste
1 TBSP oil
1/2 cup finely chopped red chillies
1/4 cup sugar powder
2TBSP vinegar
Salt
Ingredients for Filling:
1/2 cup sundried tomatoes
1/2 cup caramelised onion (lightly sauted)
2TBSP basil leaves chopped
1/4 cup chilli paste
3/4 cup grated cheese
Salt, pepper, mustard | METHOD | Make a soft dough with tortilla ingredients. Cover for half an hour. Then roll it out in circles and dry roast them on tawa. Cover with Muslim cloth to keep them soft (not in a box since they will harden, and not on newspaper since print will bleed in).
Mix all the ingredients of the filling. Spread the mixture on one tortilla and cover with another one. You can seal the edges with water.
Roast them on tawa with little oil or butter. Cut in 4 pieces. Your quesadillas are ready
Serve with sour cream and salsa sauce (recipes in previous posts).
