MUNG VEGETABLE SALAD IN ZESTY TAHINI DRESSING Recipe | Salads Recipe by reluctant_chef |
| INGREDIENTS | Very healthy, tastes Yumm!
Perfect as a stand alone salad or as a filling in wrap or sandwich or pita bread.
INGREDIENTS:
Mung (soaked and boiled)
Lettuce (leafy)
Beetroot (boiled)
Cucumber
Tomato
Carrot
Onions
Lemon
Black pepper
Salt
Zesty Tahini dressing (recipe in previous post)
| METHOD | Soak mung overnight and boil the next day. Boil beetroot. Chop tomato, carrot, onions. Tear lettuce leaves.
Mix all ingredients in a salad bowl. Add lemon, salt and pepper. Then transfer to a serving bowl and add the zesty tahini salad dressing. You can decorate it as stripes or any other design.
Enjoy!!
(Tip: you can add as many or as few vegetables as you have, but do try to make it colourful with salad greens and red tomatoes. Beetroots add their own colour and also give a nice pinkish tinge to the onions)
