Salt | METHOD | Rava Idlis are not only healthy but also perfect when you have not remembered to soak daal and rice for normal rice Idlis. Rava is rich in iron (prevents anaemia), is naturally low in fat and keep you full for a longer time.
To make rava Idlis, mix yoghurt with water and make into even liquid (no lumps). Now add rava (not critical, but if you have time, do roast the rava in a separate pan before adding) and mix well. Then add a spoon of oil, cashew nuts (kaju) and veggies like peas, carrots, french beans and sweet corn. Then add salt and Eno fruit salt. Mix well and leave aside for about 10-15 min to ferment. Greece the idli pans, pour batter in moulds and steam the Idlis for about 20-25 min. Let it cool for a few minutes and then gently scoop out Idlis in a plate.
To make sambhar, boil tur daal, add chopped tomatoes, kokum (or imli water), dhaniya and jeera powder, sambhar powder, haldi and salt. Cook for 10 min. Now for the tadka, heat oil in a small pan, sautee rye, kadi patta, hing, and dey red chillies or red mirchi powder. Pour sizzling tadka on daal. Your sambhar is ready.
Enjoy piping hot Rava Idlis with sambhar!
