MOLTEN LAVA CHOCOLATE CAKES Recipe

INGREDIENTS (Makes 6 molten chocolate cakes):

175g of semi-sweet cooking chocolate
125g of salted butter
1/4 cup of all-purpose flour (maida)
1/2 cup of granulated sugar
1/8 teaspoon of salt
2 eggs
2 egg yolks

  METHOD
1. Preheat your oven to about 225C.
2. Melt the chocolate and butter together in a double boiler. Continuously stir to ensure that the chocolate is completely emulsified.
3. Sift the flour, sugar and salt to ensure no large particles remain in the batter. Mix the dry ingredients thoroughly.
4. Beat the eggs and the egg yolks thoroughly. Ensure that the whites and the yolk are completely mixed.
5. Periodically add small portions of the dry ingredient mixture to the chocolate-butter mixture and whisk thoroughly. Ensure that no lumps are present before adding the next portion. Add small quantities of the egg mixture if the chocolate-butter mixture becomes too thick to whisk.
6. Add the remainder of the egg mixture if any.
7. Grease your cupcake moulds. Pour the cupcake mixture into the moulds.
8. Bake in the oven for about 6-8 minutes. The molten chocolate cakes should start to rise. when small cracks start appearing on the top, the cakes must be removed, even if they look like they aren't completely baked.
9. Wait for the cakes to cool for 2-3 minutes. Remove them from the moulds carefully and enjoy!
