| INGREDIENTS | Makes any meal look fancy!
Ingredients:
Red capsicums (or yellow or green)
Cheese (preferably Mozzarella)
Potatoes
Onions
Carrots
Peas
Garlic
Ginger
Garam masala
Amchur powder
Haldi
Red Chilli powder
Dhaniya jeera powder
Salt
Oil | METHOD | Wash and cut tops of red capsicum. Keep on one side (you can use it as a cap on the stuffed capsicum for decoration once cooked ...I forgot to keep aside 😊). Then remove seeds from inside. If the capsicum is too big, slice a few rings from the top. Pieces of these can be used in the filling as well.
To make the filling, mash boiled potatoes and keep aside. Then heat oil in a pan, sautee garlic, ginger, onions, peas and carrots with salt, red chilli powder, dhaniya jeera powder, garam masala and amchur powder. Cook for a few minutes and then add the mashed boiled potatoes. Mix well. The filling is ready.
Now fill the capsicum to the top with the stuffing we have just made. Cover each capsicum with cheese. You can now either cook them on an open pan or bake them. I have baked them. (Preheat oven at 180 degrees and cook for 40 minutes.)
You are ready to present your dish. You can make it look even more fancy by covering the capsicums with the capsicum caps that we had cut in the beginning.
Great accompaniment to any lunch or dinner spread!
