GRILLED ASPARAGUS & COTTAGE CHEESE IN RED BELL PEPPER SAUCE Recipe

  INGREDIENTS

Ingredients for the Sauce:
*3pc Red bell pepper.
*1pc Jalapeno.
*1pc onion.
*350gms Cherry tomatoes.
*4-5 Garlic pieces.
*250ml cream.

Ingredients for Rest of the dish:
*Paneer- 750gms.
*Asparagus-300gms.
*Basil- 1.5 cups.
*Cheese mozzarella- 250gms (optional)

  METHOD
Preparation of the Sauce:

Cut red bell pepper into 2 halves, remove the seeds and stem, whole of cherry tomatoes, onion cut into 4pcs, jalapenos cut into 2 halves(remove the stem and seeds), garlic pods with few drops of olive oil in a foil.

Except the olive oil marinate all the ingredients above in olive oil, salt & mixed Italian herbs and place them on a baking tray on top of a parchment sheet, let it bake from 30-40 mins, keep checking after 30 mins, there should be some black marks on bell pepper peel and cherry tomatoes and that's fine.

Once baked remove from the oven and remove the peel of red bell peppers and place them all in a blender with the cream and puree it really well, it should be a fine paste and not pieces or chunks of anything to be seen.

Preparation of grilled Asparagus:
Cut asparagus into 1inch pieces and add them to boiling water for couple of minutes and immediately remove and add to ice cold water for few minuets to retain the colour and crunchiness of the asparagus then marinate it in a bit of olive oil, salt, pepper, garlic paste and leave it for a day, few hours or instantly upto you and once marinated plz cook on a griller, the smoky and charred flavour is really nice and will make a difference to the dish.

Preparation of Paneer:
Saute in little bit of olive oil, salt, oregano & cayenne powder and cook it in air fryer or pan, upto you if u want to use just raw pieces of paneer and skip this step that's fine too.

Final Assembly of the Dish:
Add some sauce to the dish then chopped basil then add the paneer and some sauce again with chopped basil again, now bake it for 15-20 minutes and then add layer of asparagus and some cheese and bake it for 5-10 more minutes or till the time cheese turn golden and here your dish is ready to serve and enjoy :)
