GUJARATI HANDVO Recipe

  INGREDIENTS
A very popular Gujarati starter for parties

Made by my mom @kokilakhanderia

Ingredients:

Khatta Dhokla flour (combination of rice and daal)
Dahi (ideally one-day old dahi, which is sour)
Jaggery (gur)
Bottle gourd (dudhi) - optional
Boiled corn - optional
Imli
Haldi
Red chilli powder
Achaar masala (optional)
Eno fruit salt
Rye
Kadi patta
Sesame seeds (til) - optional
Hing
Corriander leaves
Salt

  METHOD
The previous night (or 8 hours before), for 1/2 kg of khata dhokla, mix 1 cup dahi and sufficient water to mix well. Then add some water to cover 1/4" above the atta. Also soak gur and imli in hot water to have it ready for the next day.

The next morning, or after atleast 8 hours, start with the preparation. In the 1/2 kg dhokla aata, add haldi, red chilli powder, salt and achaar maala. Strain gur mili water into the batter. Add crushed ginger green chili paste. Then gradually add hot water to the batter to make it the right consistency.

Then add grated dudhi (bottle gourd) and boiled corn (if available), 1 tbsp oil (to ensure handvo turns out soft). Check taste and add any masala if required. Add 1 packet eno. Then keep stirring it so that the batter becomes airy.

Then in a wide flat pan, heat some oil and saute rye, kadipatta, til and a pinch of hing. Then pour the batter in the pan, cover it and let it cook on slow fire for roughly 10 min. (Keep checking to ensure bottom does not get burnt). Check if it is cooked by poking in a knife. If the knife comes out clean, then it is cooked.

Now flip the handvo in the pan for the other side to cook.

Once it is cooked on both sides, let it cool and cut into square pieces

Serve handvo with green chutney and/or meethi chutney (khajur- imli chutney).

Enjoy!

(Tip: You can replace gur and imli with sugar and lemon, but the taste will not be as authentic. If you like only the crispy top, make it in a shallow pan and make it twice. Also if you add sufficient boiled corn, it would become Corn Handvo)
