| INGREDIENTS | Onepot Beetroot rice meal, very easy, very quick
Ingredients:
Rice
Beetroot
Peas
Potatoes
Ginger
Garlic
Bay leaves (Tej patta)
Cumin seeds
Cardamom
Cloves
Cinnamon stick
Turmeric powder
Corriander leaves
Mint leaves
Salt | METHOD | Wash and soak rice for 20 min. Heat oil in pot in which you will be cooking the rice. Fry bay leaves, jeera, cardamom, cloves and cinnamon until they begin to sizzle. Then add onions slices and green chillies until golden brown. Add ginger garlic paste and cook for some time. Then add peas, pieces of beetroot and potatoes and mix a pinch of haldi powder, corriander and mint leaves. Fry everything for 2 min.
Add water, based on the quantity of rice that you plan to cook, salt (water should taste slightly salty) and a pinch of haldi. Add soaked and drained rice and cook on medium flame until water is almost evaporated, but still soggy. Cover lid and cook on low flame and cook until done. Now fluff up rice and bring up beetroots settled at the base. The colour of the beetroots spreads nicely to the rice.
