| INGREDIENTS | Gluten-free and very healthy! Perfect for breakfast, lunch, dinner or anytime of the day.
Traditionally uttapam were made with slightly sour batter that is left over after making dosas the previous day. The vegetable toppings balance the sourness of the batter and tastes good.

Ingredients:
2 katoris ragi rice
1 katori urad daal
I tsp methi seeds (optional)
Onions
Tomatoes
Chaat masala
Oil | METHOD | Soak rice n daal over night( 6 to 7 hrs) make a paste like batter in the mixture. Leave for 6 to 7 hrs to ferment. Add 1 tbsp sugar (optional) and salt to taste.
Grease the Uthappa utensil (can also be made in a flat tava). Add finely chopped onions, tomatoes and a sprinkle of chaat masala and cover it. Let it cook for about 5-7 minutes (keep checking to ensure it does not burn. Then flip it briefly to make the tomatoes and onions slight brown. Flip again.
Serve with tomato ketchup or chutney. You can also serve with with either Malgapudi (traditional South Indian powder chutney)
