GUJARATI DAAL DHOKLI Recipe

  INGREDIENTS

Ingredients for Daal:

Tur daal
Chilli powder
Turmeric powder
1/2 tsp Garam masala
1" Fresh Ginger finely chopped
2 slit green chillies
8-10 kadi patta (curry leaves)
4-5 Kokum, washed and soaked
2 drum sticks cut in pieces and boiled
Jaggery to taste
Salt
Oil

Ingredients for tempering:

2 tbsp cow ghee
2 tsp cold pressed peanuts oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
Peanuts
2-3 cloves
2-3 cinnamon sticks
Pinch of hing

Ingredients for Dhokli:

1 cup whole wheat flour
1/2 tsp Red chilli powder
1/2 tsp dhaniya jeera powder
1/4 tsp turmeric powder
1 tsp oil
Salt
Whole wheat flour dor rolling

  METHOD
Method for Daal:

1. Wash the tur daal 3-4 times in warm water. Soak the dal in the cooker with 4 cups of water for half an hour
2. Pressure cook daal for 3-4 whistles. Let it cook and then whisk to a smooth consistency
3. Add all the ingredients to the daal. Boil on medium flame. Keep stirring
4. In a small pan, heat oil and ghee for tempering. Add mustard seeds, cumin seeds, pinch of hing, cloves, and cinnamon
5. Pour tempering on the daal and let it sit dor 10-15 min.
6. Add more water to the daal. Make sure the consistency is thin and watery

Method for Dhokli

1. Mix all ingredients. Knead to a soft dough. Divide into 6 portions.
2. Roll our big but very thin rotis from each portion
3. Lightly roast the rotis on tava. Hot oil required here
4. With a pizza cutter, cut each roasted roti into medium sized squares or diamond pieces.

Final preparation:
1. To the boiling daal, add the dhoklis, one at a time. Stir gently
2. Keep stirring gently to avoid dhoklis sticking to the pan
3. Let it simmer doe 5-7 minutes
4. After lowering the gas and keep for 5 min and serve hot.

Cold pressed oil-
In this oil the seeds are crushed and the oil is extracted without heat. So the nutrients are retained unlike refined oil
