CORN KHICHDI (MAKAI KI KHICHDI) Recipe | Snacks Recipe by reluctant_chef |
| INGREDIENTS | Very easy, very healthy, perfect as a teatime snack, with or without toast
Ingredients:
Corn cobs (sweet corn)
Ginger
Green chillies
Garlic
Corriander leaves
Sesame seeds (optional)
Grated coconut (for garnishing)
Nylon sev (medium fine sev for garnishing)
Salt
Rye (mustard seeds)
Kadi patta
Oil | METHOD | Grate the corn and steam it in a cooker for 3 whistles. You would need one corn cob per person.
Then heat oil in a non-stick pan and saute rye, kadupatta, garlic, ginger and green chillies then add the steamed corn. Add lemon.
Keep stirring and ensure water gets burned off. Cook for about 10 min. When it starts leaving the sides, cook it a bit more and transfer to a serving dish. Your corn khichdi is ready.
Garnish with nylon sev, grated coconut and corriander leaves.
