| INGREDIENTS | 3 cups rice flour 1 1/2 cup wheat flour 1 cup khatta dahi 1/4 cup malai (fresh cream) Green chillies Red chilli powder Haldi powder Salt Oil
Equipment: Chakri sancha (chakri press) | METHOD | Mix all the above ingredients into a dough. (Oil not required because there is malai). Green chillies should be crushed extremely fine else it will bock the hole of the chakri press. Dough should be semi-soft. Let it rest for 10 minutes. The dough should not be breaking when you lift it. If that happens, add some more wheat flour. (This happens if the rice flour is very old).
Place wet cloth over it and keep for 10 min. to make the dough sticky (for better binding).
Check taste of dough and add and spices if required. Then put a roll of dough in the chakri press. Screw it tightly and start squeezing out the chakris on a newspaper. If chakri keeps breaking while squeezing it out or while lifting it, it means there is too much malai. In this case you can add more wheat flour and knead it again.
Heat oil in a frying pan, gently lift each chakri taking support of a flat ladle if required, and start frying the chakris on a medium flame. Once golden brown, take them out on an absorbent paper (like paper napkin) to remove excess oil. Your chakris are ready.

(Tip: In case you want to make the chakris really hard, you can skip the malai)
